Cottage cheese, with its whey drained, and hard cheeses like cheddar or Parmesan are good bets for your dehydrator. Cream cheese is also good to dehydrate—especially as a layer on top of fruit leathers.

Never try drying milk, however. Drying milk isn’t an easy—or necessarily safe—process. Most home-dehydrated milk goes bad rather quickly because any fat at all makes the dried milk go bad very quickly. It’s easier just to buy dried, nonfat milk powder from the store.

Fresh cheeses and soft cheeses are also hard to dry.
